Because the cold temperature locks up the starch molecules so making them taste more stale than they really are...?

I know what you mean about the chocolate though. It's a trade-off. They do say to store them in a cool, dry place. The air in a fridge is cold and damp. I daresay you keep them in an airtight container though.
